AHA Mushrooms grows over a dozen varieties of specialty mushrooms year-round in Vermontville, NY — including shiitake, lion's mane, oyster, chestnut, nameko, and enoki. They farm indoors on substrate blocks and outdoors on sugar maple logs, following the Adirondack seasons.
